In a pot, add in potatoes and fill the pot with
water. Add in 3 Tb of salt and boil the potatoes for
20 to 25 minutes or until potatoes are soft. Drain
the potatoes and set them aside to steam off some of
the water.
In a bowl, mix melted unsalted butter, grated
garlic, miso paste, black pepper, and salt. I used
Trader Joe's minced garlic.
Taste to see if you need any more seasoning; if
not salty enough, add 0.5 tbsp of Miso paste.
Drizzle oil all over the baking pan and add in
drained potatoes. Use a flat surface like the bottom
of a mason jar and smash all the potatoes down and
drizzle miso butter all over the potatoes.
Broil the potatoes in the oven for 4-7 minutes or
until it is crispy brown. Garnish with green onion
and enjoy!
