     Cashew Chicken Slow cooker

Ingredients
2 boneless, skinless chicken thighs or breasts
1/4 cup flour
1/2 tsp black pepper
1 Tbs canola oil
1/4 cup soy sauce
2 Tbs rice wine vinegar
2 Tbs ketchup
1 Tbs brown sugar
1 garlic clove, minced
 
1/2 tsp grated fresh ginger
1/4 tsp red pepper flakes
1/2 cup cashews
I added- bell peppers, broccoli and snap peas
Double the sauce and add less red pepper flakes - too spicy

Instructions
Combine flour and pepper in a large ziplock bag. Add chicken. Shake to coat with flour mixture. Heat oil in a skillet over medium high heat. Brown chicken about 2 minutes on each side. Place chicken in a slow cooker
Combine soy sauce, vinegar, ketchup, sugar, garlic, ginger and pepper flakes in a small bowl. Pour over chicken. Cook on low for 3 to 4 hours. Add the vegetables with 1/2 hour left to cook. Add cashews and stir
Really cooks in 3 to 4 hours..don't cook longer
Serving Suggestions
Serve over rice.
