2 TBSP taco seasoning (cumin, paprika, chili powder)

1 jalapeño, minced; slices for garnish

6 eggs, lightly beaten
|
|
2 cups shredded Mexican cheese
|

2 TBSP chopped parsley
|
|
1 cup sour cream for serving
|

Instructions |
|
|
-Preheat oven to 350.
-In large skillet, heat oil over medium heat
-Add onion and cook until soft (2 min)
-Add ground beef and season with S&P
|

-Break up with wooden spoon until no longer pink (6
min)
-Sprinkle in taco seasoning and jalepeno (1 min)
-Drain and let cool slightly
|

|
-In large mixing bowl, whisk eggs
-Add meat mixture
-Spread evenly in 2-quart baking dish
-Sprinkle with cheese
|
|
|
-Bake for 25 min
-Sprinkle with parsley
-Top each slice with sour cream and jalapeño
|
