-Preheat oven to 375
-Spray large baking dish with cooking spray
-Half and deseed the bell peppers
-Drizzle bell peppers with olive oil
-In large skillet, heat 1 tbsp EVOO over medium
high heat
-Add onion and cook until tender (2 min)
-Add garlic and cook until fragrant (1 min)
-Add ground beef and cook until no longer pink (5
min)
-Add chili powder, cumin, paprika, salt, pepper
-Drain meat mixture
-Place peppers cut side up in baking dish
-Spoon layers of meat, salsa, cheese into each
pepper (chees on top)
-Bake 20 minutes
-Serve with hot sauce and lime
