-Heat EVOO in skillet over medium heat
-Season chicken with oregano, salt, pepper
-Add chicken to skillet
-Cook until golden (8 min per side)
-Remove from skillet and set aside to cool
-Chop into 1-inch pieces when cooled

-In same skillet over medium heat, melt butter
-Add garlic and stir until fragrant (1 min)
-Add cherry tomatoes and season with S&P
-Cook until tomatoes begin to burst

-Add spinach and stir until it begins to wilt
-Stir in heavy cream and parmesan
-Bring to a simmer
-Reduce to low heat until sauce is slightly reduced
(3 min)

|
-Return chicken to skillet
-(OPTIONAL) Mix with pasta
-Cook another 5-7 min until cooked through
-Serve with lemon wedge
