     Mimosa - Hawaiian

Ingredients
Coconut Rum, One part
Pineapple Juice, 2 parts
Champagne
Pineapple tidbits, crushed, or cherries
 

Instructions
For individual glass, add one ounce coconut rum and two ounces pineapple juice to champagne glass. Top with champagne and garnish with fruit.
To make a pitcher, add 1 Cup coconut rum, 2 Cups pineapple juice, and one 750 ml. bottle of champagne to pitcher. Add fruit to pitcher or to individual glasses.
I like to mix ahead 2 parts pineapple juice with one part coconut rum into a pitcher, pour this mixture into your flute as needed and fill with champagne.
