For individual glass, add one ounce coconut rum and two ounces
pineapple juice to champagne glass. Top with champagne and
garnish with fruit.
To make a pitcher, add 1 Cup coconut rum, 2 Cups pineapple juice,
and one 750 ml. bottle of champagne to pitcher. Add fruit to pitcher
or to individual glasses.
I like to mix ahead 2 parts pineapple juice with one part coconut rum
into a pitcher, pour this mixture into your flute as needed and fill with
champagne.
