     Zucchini & White Bean Salad

Ingredients
4 zucchini diced
1 can white beans drained and rinsed. I used white kidney beans
Zest of 1 lemon
1/4 c lemon juice
1 T honey
1/4 c olive oil
1 tsp pepper
1/2 tsp salt
1/4 c mint chopped
 
Instructions
Mix up dressing. I had to warm the honey to incorporate into dressing. Mix everything together. My new fav salad.
