     Clam Chowder

Ingredients
1.4 lbs bacon, diced and browned
3 large onions chopped, cooked until golden1-5 medium potatoes peeled and cubed, add to onions
2 cups boiling water, added to potatoes ad cooked until tender but not mushy
2 cans minced clams (tuna can sized cans), added with juice to potato/onions and simmer a few mins
extra potato, mashed/blended into the white sauce to add creaminess
14 oz can evaporated milk
1/4 cup butter
oyster crackers
white sauce-
 
1/4 cup butter
1/4 cup flour
4 cups milk
1.5 tsp salt
1 tsp sugar
1.4 tsp pepper
1 generous pinch each thyme and rosemary

Instructions
add white sauce to clam mix and cool. then add 14 oz can evaporated milk. heat and simmer 10 minutes. cool, chill in fridge, best kept 1-2 days before reheating to serve. when reheating, add 1/4 cup butter. serve with oyster crackers. serves 6-7.
