Transfer warm milk to the bowl of a electric mixer
and sprinkle yeast on top. Add in sugar, eggs, egg
yolks and melted butter. Mix until well combined.
Next stir in flour and salt until a dough begins
to form. Put dough hook on stand mixer and knead
dough on medium about 8 minutes. Dough should form
into a ball and be slightly sticky but not
sticking to the bottom of the bowl. Once the dough
has formed add a few drops of olive oil and roll
the dough in the oil so that its covered and then
cover the bowl with plastic and a towel. It should
rase 1-2 hours and be doubled in size.

Once the dough has raised take it and make a ball.
Score with a knife down center and across to make
4 equal size pieces. At this point I placed on a
baking sheet lined with parchment paper to raise
again. Covering with plastic and towel. Once dough
has raised again line a large baking sheet with
parchment paper. Mix brown sugar and cinnamon in a
bowl

Roll 1st piece of dough into large circle about 12
to 14 inches in diameter. Place dough on baking
sheet. Spread 1/3 of butter on circle and then
spread 1/3 of sugar cinnamon mixture over circle.
Repeat with next layer, butter, sugar, Repeat with
3rd circle, layer over the other circle, butter
and sugar. Roll out last layer and place over the
other 3.This will be the guide to cut

Start cutting through your dough carefully. Start
each cut a the edge of the class. I started at 12
o clock, then 6 o clock, 9 oclock and 3 oclock.
Once I had 4 cuts I cut eah section in half to
make 8 sections. Then I cut each of those in half
so that I ended with 16 even sections. Next is the
twisting process. You want to work the sections
two at a time. I held one section in my left hand
and twisted it 2 turns counter clockwise and with
my right hand twisted dough 2 times clockwise.
Bring them together to form a point. Repeat with
all sections. remove glass. Brush with a egg wash.
Bake at 350 20 minutes, turn baking sheet and bake
10 more minutes. Once the snowflake cools for 10
minutes you can dust with confectioners sugar or
make frosting and drizzle. I place a cute bowl in
center with extra frosting.
Frosting Mix sugar, cinnamon, vanilla and add milk
to desired consistency.
