     Feta and Pistachio Phyllo Bites

Ingredients
1 pkg Phyllo sheets
8 oz feta, slice lengthwise into long rectangles
8 oz melted butter
1/3 c fig jam or I tried and like pepper jelly
1/4 C chopped pistachios
honey to taste
chipotle powder to taste
salt and pepper to taste
 

Instructions
Fold out filo. Brush every 2 sheets with melted butter. Repeat with 10 sheets. On top sheet spread jam onto the filo, Sprinkle chopped pistachios, chipotle powder salt and pepper. Add the feta rectangles at the edge of the filo sheets along the wide side of the sheets and roll up really tight. Slice into 12 rounds with a sharp knife.
Add 1/2 tsp of butter to the bottom of a 12 muffin tin. Add the filo bites and then top each with 1/2 tsp of melted butter Bake at 400 for 20-25 minutes or until golden
Drizzle with honey while hot .Place on serving dish and drizzle with more honey
