Heat a large pot on medium high heat with oil. Add the onions,
celery, and carrots and cook until tender, about 4 to 5 minutes.
Add the sausage and cook until brown, about 4 to 5 minutes.
Stir in the tomato paste, garlic, parsley, salt, oregano, basil, and
red pepper flakes. Cook for two minutes.
Add the broth and tomatoes and bring to a boil. Stir in the orzo,
reduce heat to medium low, cover, and simmer until pasta is al
dente, 8 to 10 minutes.
Stir in spinach and cream. Serve.
