     Sausage orzo soup

Ingredients
2 large carrots, peeled and chopped
2 ribs celery, sliced
1/2 medium onion, diced
1 lb sausage
3 cloves garlic, minced
2 tbsp tomato paste
1 tsp dried parsley
1 tsp salt
1/2 tsp dried oregano
 
1/2 tsp dried basil
1/4 tsp red pepper flakes
4 cups chicken broth
1 cup orzo
14 ounce can diced tomatoes
2 cups fresh baby spinach
1/2 cup heavy cream

Instructions
Heat a large pot on medium high heat with oil. Add the onions, celery, and carrots and cook until tender, about 4 to 5 minutes. Add the sausage and cook until brown, about 4 to 5 minutes.
Stir in the tomato paste, garlic, parsley, salt, oregano, basil, and red pepper flakes. Cook for two minutes.
Add the broth and tomatoes and bring to a boil. Stir in the orzo, reduce heat to medium low, cover, and simmer until pasta is al dente, 8 to 10 minutes.
Stir in spinach and cream. Serve.
