5 oz. Pancetta, cut into 1/2 inch pieces
1 red bell pepper, cut into one inch pieces
1 Cup carrots, cut into coins (Precook)
1 small yellow onion, cut into 1/2 inch pieces
1/2 tsp. kosher salt
1/4 tsp. freshly ground black pepper
6 Tbl. unsalted butter
6 to 8 fresh sage leaves
1/2 Cup grated Parmesan
Instructions
Preheat oven to 425 deg. Line a baking sheet with Parchment paper.
Partially cook the green beans and carrots.
Add the gnocchi, green beans, carrots, onion, red pepper, and
pancetta to large bowl and mix to combine. Spread this mixture onto
the prepared sheet and sprinkle with salt and pepper. Cut 4 Tbl. of
butter into slices and top the gnocchi mixture with butter and sage
leaves.
Place on the middle rack and bake, stirring half way through, until the
gnocchi are tender, about 18 minutes. Melt the remaining 2 Tbl.
butter. When the gnocchi are done, drizzle with butter and gently stir
to combine. Remove sage leaves.
Scoop into bowls and top with grated Parmesan.

Suggestions
This is really good and super easy to make. If you don't have sage leaves, don't worry about it. I don't think that changes the flavor.
