1 pound Sweet Potatoes, cut into larger bite-sized chunks
1 tsp. Seasoning Salt of your choice
1 Tbl. EVOO
4 c. (about 175 grams) pre-washed Curly Kale
1/2 c. Reduced Sugar Dried Cranberries
1/4 c. Walnut pieces
2 Tbl. Goat Cheese Crumbles
1.5 Tbl. EVOO
1 Tbl. Apple Cider Vinegar
1.5 tsp. Flax or other healthy seed, optional
1 tsp. Orange Marmalade
1/2 tsp. Dijon or Brown Mustard
1 tsp. fresh grated Ginger or 1/4 tsp. dried Ginger
1/8 tsp. Salt
1 Tbl. Fresh herbs, optional if you have some
Instructions
Toss sweet potato chunks with seasoning salt and 1 Tbl EVOO.
Cook in air fryer at 400 degrees for about 15 minutes or until
tender and charred on the edges. Let cool while you make the
remainder of the salad.
Put a kettle full of water on to boil. Place kale in a large colander in
the sink and slowly pour boiling water over the kale to wilt and
soften it slightly. Let drain for a few minutes then pat dry with a
clean dish rag or paper towels. Place in a large bowl big enough for
tossing room. Add cranberries, walnuts and goat cheese to kale.
To make dressing, put 1.5 Tbl EVOO through Salt and fresh herbs in
a small mason jar and as Tay Tay sings, “Shake It Up!” Pour
dressing over kale mixture and toss thoroughly. Add sweet potato
chunks and toss to distribute.
