Finely Dice Veggies. Saute in Butter in Pan for 4
minutes or until onion is transparent. Add Tomato
Paste, Flour and Cooking Sherry. Reduce by 2/3rds

Add White Wine. Cook and reduce by half. Add
Lobster Stock. Bring to a boil and then simmer for
1 hour. Remove soup from Stove and Blend in blender.
Mix on high. Put through Seive.

Place back on stove. Simmer and add heavy whipping
cream. Season Soup to your liking.
Cut cooked shrimp in small pieces and saute in butter to warm lobster.

|
Add lobster to bottom of bowl. Ladle soup around Lobster. Garnish with
chives or parsley.
