     Thai Butternut Soup

Ingredients
2 Large Butternut Squash, cut in large pieces
1 t. Chopped Ginger
1 Large Onion
3/4 t. Smoked Paprika
1/2 t. Cinnamon
1/2 t. Cardamom
1/2 t. Curry Powder
3-4 Cups Water
3 Pinches Stevia or 3 T Maple Syrup
 
2 t. Salt to taste
1/4 t. Black Pepper
1 Can Coconut Milk
Cilantro garnish

Instructions
Skin the butternut squash and cut into large pieces. Chop the onion into large pieces. Place all the ingredients with the exception of the coconut milk into a pressure cooker. Cook on high for 8 - 10 minutes.
With an immersion blender purate the ingredeints. Add the coconut milk. Add more salt and stevia if needed.
Serve with cilantro and a swirl of coconut milk on top for garnish.
