     Seafood - Shrimp Scampi Pasta Bake with lemon

Ingredients
6 oz linguini or spaghetti
18 large raw shrimp, peeled and deveined
3 Tbl. butter
2 cloves garlic
1/4 tsp. red pepper flakes
1/4 cup white wine or chicken broth
1/2 lemon, juiced and zested
1/2 Cup heavy cream
1/4 Cup Parmesan cheese
 
1/2 Cup shredded mozzarella
salt and pepper to taste
fresh chopped parsley for garnish

Instructions
Preheat oven to 375 deg. Cook pasta until al dente. Drain and set aside.
In a large skillet, melt butter over medium heat. Add the garlic and red pepper flakes, and saute until fragrant, about one minute.
Add the shrimp to the skillet and cook for 3-4 minutes until they are pink. Remove and set aside. Pour in the wine, simmering for 2 minutes. Stir in lemon juice, zest, and heavy cream. Bring to a gentle simmer.
Add the cooked pasta to the skillet, toss to coat. Add salt and pepper. Transfer to 2 quart baking dish. Arrange the shrimp on top. Sprinkle with Parmesan and Mozzarella over all. Bake for 15- 20 minutes until cheese is melted and bubbly. Garnish with parsley before serving if you desire.
Serving Suggestions
We thought this was great. Very lemony. Right amount for 2-3 people. Served with bisquits.
