     Roasted Tomato Soup

Ingredients
3lb roma tomatoes halved
1 large onion quartered
6 cloves garlic
3T olive oil
1t salt
1/2t pepper
4 cups chicken/vegetable broth
1/2 cup fresh basil
 

Instructions
Oven 400. Mix tomatoes, onion and garlic with s/p and olive oil. Roast 30-35 minutes
Put in large pot with broth. Simmer 10 minutes.
Let it cool. Put in basil and blend into a puree. Reheat and eat!
