     Sweet Peppered Bacon Bites

Ingredients
8 ounces peppered slab bacon, sliced into 1/8 inch thick pieces
1/2 cup packed light brown sugar
2 teaspoons olive oil
 

Instructions
Heat oven to 375 and line a rimmed baking sheet w/ parchment paper. Place the strips of bacon on it coating them with the brown asugar. Lightly brush a piece of parchment paper w/ oil. Place a smaller baking sheet on top of the bacon.
Bake for 10 minutes. Remove from the oven and set aside. Drain off the fat and bake for 10 to 15 minutes or until bacon is crisp and caramelized.
Take the bacon out of the oven and drizzle w/ the caramel that was formed while in the oven. Place back in the oven w/out the top pan for 1-2 minutes.
Remove the bacon to a wire rack to cool. Cut into 2 inch pieces. Serve at room teperature. To reheat place in a warm oven for 2-4 minutes.
