Beat together eggs, granulated sugar, and vanilla in large bowl until sugar is dissolved. Beat in oil until smooth. Stir in flour, soda, and salt. Fold in walnnuts and apples. Batter will be thick. Turn into greased and floured 11X7-inch baking dish (2 quarts) or 12-cup Bundt pan. Bake 1 hour for baking dish or 1 hour 25 minutes for Bundt pan until top springs back when lightly pressed. Cool cake in baking dish on rack or 10 minutes in Bundt pan, turn out, and cool on rack. Dust cake with confections sugar or frost with Lemon Cheese Icing
