Grease a foil-lined 9X9-inch baking dish. Saute the vegetables and set aside.
In a small skillet, brown the sausage until no pink remains; drain fat. Sprinkle with dried mustard, salt, and pepper; stir to mix.
Layer HALF of the bread cubesin the bottom of the baking dish. Top with sausage and HALF of the shredded cheese. Cover with the remainng bread cubes and then layer with the mushrooms, green bell pepper, and onion. Sprinkle with remaining cheese. In a mixing bowl, whisk together eggs and milk; pour over the entire baking dish. Cover with Aluminum foil, and refrigerate for 12 to 24 hours.
Preheat oven to 350 degrees F. Bake covered for 35 minutes. Remove foil and bake for an additional 15 minutes, or until top is evenly brown and center is not watery.
