Ingredients
1 can of sweet potatoes drained
1 can of apricot halves
1 cup packed light brown sugar
1 1/2 tablespoons cornstarch
1/4 teaspoon of salt
1/8 teaspoon of cinnamon
1/2 teaspoon grated orange peel
2 tablespoons of butter
3/4 cup chopped pecans
 
1 1/2 cups of miniature marshmallows

Instructions
preheat oven to 375. cut sweet potatoes lengthwise. arrang in a baking dish
drain apricots reserving 1/3 cup of syrup. combine brown sugar and cornstarch in a small sauce pan. stir in salt, cinnamon, and orange peel. stir in reserved syrup
bring syruo mixture to a boil stirring continuously for 2 min. stir in apricota and pecans
spoo apricot mixture over sweet potatoes. sprinkle with marshmallows. bake until marshmallows are puffed and golden brown. 20 min
