     Mango-Ginger Salsa

Ingredients
2 ripe mangoes, pitted, peeled, and diced small
2 Tbs. finely chopped red onion
2 tsp peeled, finely chopped fresh ginger
1 jalapeno pepper, seeded, deveined, and minced
juice of 1 lime (or to taste)
1 Tbs. finely chopped fresh cilantro
 

Instructions
Put all the ingredients except the cilantro into a nonreactive medium bowl and stir with a rubber spatula to combine. Allow the salsa to macerate for no more than 30 minutes. Stir in the cilantro just before serving.
These are a showstopper at cocktail parties, great w/ margaritas or iced tea. Just pile the chips into a napkin-lined basket, put the salsa close by so guests can spoon some over their chips, and have some colorful small napkins on hand.
Add tomato, avocado and garlic if desired.
