     Sweet & Sour Meatballs

Ingredients
Sweet and Sour Sauce-
1/2 c. brown sugar
2 Tbs. cornstarch
1/3 c. apple cider vinegar
1 T. soy sauce
8-13 oz. pineapple chunks w/ syrup reserved
2/3 c. pina juice (use reserve syrup)
1/3 c. green and/or red pepper- big chunks
1-1 1/2 lb meatballs (frozen meatballs-thaw first)
 
Meatballs- (I use SAM's)
1 1/2 lb ground beef
1/3 c. cracker crumbs
1/3 c. minced onion
1 1/2 tsp. salt
1/4 tsp. ginger
1/4 c. milk
1 egg beaten

Instructions
Sweet/Sour Sauce- Mix cornstarch and sugar in saucepan. Stir in pineappple juice, vinegar and soy sauce. Bring to boil. Lower heat and cook until thickened, stirring frequently. Pour sauce over meatballs and cook for several hours (4-5) in crock pot, or can heat in microwave instead. Add pepper and pineapple near the end of cooking time in crock pot depending on how crunchy you want the peppers to be. Serve w/ toothpicks if it's a party.
Meatballs- Mix. Shape into 1 1/2 in. balls. Cook in skillet. Drain fat.
If using crock pot can use 1 1/2lb. meatballs, if making sauce & baking in microwave, use 1 lb. meatballs.
Addendum- Also debuted BBQ Meatballs. Pour KC Masterpiece BBQ sauce over meatballs and heat through in crockpot.
