     Pilipino Adobo

Ingredients
2 lbs of boneless pork ribs (with fat on it) cut into 2 inch chunks
at least 6 cloves of crushed gralic
1/2 cup soy sauce
1/2 cup white or apple cider vinegar
enough water to cover the meat after adding soy and vinegar
3 whole bay leaves
lots of crushed black pepper
1 tsp sugar or more
1 tsp of catsup
 

Instructions
Place the meat chunks in your deep pan. Mix all the ingredients in with the meat. You can choose to marinade the meat for a few hours for more flavor or cook it right away. Bring the mixture to boil, then put down to simmer medium heat. Halfway through cooking, add about 1 tsp of sugar in it and mix. Taste the sauce. If it's too salty add more sugar, if it's too vinegary, add more salt. after adding the sugar, be sure to stir it every so often, to avoid scorching. When the sauce thickens, add about a tsp of catsup. Eat with sliced fresh red tomatoes and white rice. You can also use dark chicken meat for this recipe.
