     Coconut Shrimp

Ingredients
Canola or safflower oil, for frying
1/2 c. plain bread crumbs
2 pinches ground cayenne pepper
1 1/2 t. Chinese 5 spice powder
1 lime
1 c. shredded unsweetened coconut
2 egg whites
1 lb. large fantail shrimp, deveined and peeled
1/2 t. salt
 

Instructions
Heat 2 inches oil in a large skillet over med high heat. A cube of bread should brown in a count to 10 when oil is ready.
Season bread crumbs with cayenne papper and 5 spice powder. Grate the zest of the lime and add it to the bread crumbs. Wedge the lime and reserve.
Toss coconut with seasoned bread crumbs to combine. Lightly beat the egg whites. Dip shrimp in the egg whites, then coat with the coconut breading. Fry shrimp 5 min in hot oil until evenly golden and crispy. Salt lightly, garnish with lime wedges and serve.
