     Spinach Egg Drop Soup

Ingredients
6 cups fat-free, less sodium chicken broth
1 large egg, lightly beaten
2 cups torn bagged baby spinach leaves
1 1/2 tbsp low sodium soy sauce
4 green onions, sliced
 

Instructions
Bring broth to a boil in a large saucepan. Reduce heat to low. Slowly add egg, stirring constantly, until lacy strands form. Stir in spinach. Cook 1 minute. Remove from heat. Let stand for 1 minute. Stir in soy sauce and green onions.
