Ingredients
Grated Coconut (1 Cup)
Jaggery (A small piece)
Rice (4 teaspoons: Soak for an hour) or Rice flour (4 teaspoons)
Tamarind Paste (1/2 teaspoon)
Green Chillies (3-4 according to taste)
Coriander ( 1 fistful or according to taste)
Brinjal/Any vegetable ( 1 pound ) :Boiled or Cooked
Vegetable/Canola Oil
Mustard Seeds (1/2 teaspoon)
 
Cumin Seeds (1/2 teaspoon)
Red Chilli (3-4 according to taste): Optional
Salt to taste

Instructions
Grind coconut, jaggery, rice, tamarind paste, Green Chillies and Coriander together with water. ( Add water according to consistency required)
Heat 2 teaspoons oil in a pan. Add Mustard Seeds, Cumin Seeds and Red Chilli. Wait till the mustard seeds burst and then add the mixture from Step #1.
Add the vegetables and salt. Boil for 5-10 minutes on low flame.
Serving Suggestions
Great with Rice/Roti/Idlis
