     Colorful Green Bean Saute'

Ingredients
2 C fresh cut Green Beans
1 t Olive Oil
2 - 4 T Water
1/2 C thinly sliced Red Pepper
1 T Olive Oil
2 t Lemon Juice
1 t fresh Lemon Zest
Salt and freshly ground Black Pepper, to taste
2 T sliced, Toasted Almonds, for garnish
 

Instructions
Saute green beans in oil over medium-high heat for 2 minutes. Add water and cover to steam until just tender and water is absorbed. Add red pepper to pan and saute' for 2 minutes. Transfer to platter or separate plates. Mix together olive oil, lemon juice, lemon zest, salt and pepper. Drizzle over green beans and peppers. Garnish with sliced almonds and serve.
