Instructions
Preheat oven to 450 degrees. With the tip of a paring knife, make small slits all over the roast and insert the garlic slivers. Rub the roast with salt and pepper; place on a rack in a shallow pan. Roast for 25 minutes.
Reduce heat to 350 degrees and roast the meat until and instant- read thermometer registers 135 degrees ro 140 degrees for medium- rare, about 1 3/4 hours. Let the meat rest before carving.
