     Crock Pot Enchiladas

Ingredients
1 lb. ground beef
1 cup chopped onion
1/2 cup green pepper
1 16oz. can pintos beans (rinsed and drained)
1 15oz. can black beans (rinsed and drained)
1 can Rotel (undrained)
1/3 cup water
1 tsp chili powder
1/2 tsp ground cumin
 
1/4 tsp pepper
1/2 tsp salt
1 cup shreded sharp chedder cheewsed
1 cup shreded Mnoterey Jack cheese
6 flour tortillas 6-7 inch

Instructions
Cook beef, onion and green pepper and drain. Add the next 8 ingredents and simmer 10 mins. Combine cheeses.
In 5 quart cooker layer 3/4 cup beef mixture 1 tortilla, 1/3 cup cheese. Repeat layers.
Cook low for 5-7 hours.
Serving Suggestions
Serve with salsa and guacamole
