     Stuffed Mushrooms Parmigiana

Ingredients
12 large fresh mushrooms
2 tbsp margarine or butter
1 finely chopped onion
2 oz diced pepperoni
1 sm clove garlic - minced
1/2 cup Ritz crackers - crushed
2 tbsp Parmesan cheese
1 tbsp parsley
1/2 tsp seasoned salt
 
1/4 tsp organo
dash pepper
1/3 cup chicken broth

Instructions
wash & dry mushrooms - remove stems, finely chop them and set aside
Melt margerine or butter, add onion, pepperoni, garlic and chopped stems. Cook til veggies are tender
Add crumbs, cheese, parsley, salt, oregano & pepper. Mix well, stir in chicken broth.
Spoon into mushroom caps, place in shallow pan wtih 1/4 inch water or white wine. Bake uncovered at 325 degrees for 25 minutes or until heated through
