Slice cucumbers, crush garlic and cut scallions. Mix together and set aside.
Heat 2 T oil and cook onions, add pork and cook until pink is gone. Add wine, worcestershire sauce, soya sauce, brown sugar, red pepper flakes and chicken stock. Bring to a boil on medium heat then reduce heat and simmer until the liquid evaporates.
Cook noodles according to package direction, I use vermicelli noodles which take a few minutes to cook. Drain well and place on platter.
Pour pork mixture on top of the noodles and top with the cucumber/garlic/scallions. Yummy!
