     Pork Loin w/ Apples

Ingredients
1 pork loin
salt & pepper
all purpose flour
1 cup sugar
1/3 cup cider vinegar
4 apples, peeled, cored & quartered
2 tsps sugar
1 cup cream
 

Instructions
Preheat oven to 450. Score the top of pork. Rub w/ salt, pepper & flour. Roast for 15 min in 13x9 pan. Meanwhile, combine sugar & vinegar in saucepan. Heat, stirring until boiling. Reduce heat & simmer 5 minutes.
Baste pork w/ vinegar, sugar mixture and reduce oven to 350 degrees. Pour enough water to film bottom. Continue to roast, basting every 20 minutes (about 30 min per pound) Add more water as necessary.
About 30 minutes before pork is done, add the apples, basting them. Sprinkle w/ sugar & turn occassionally.
Transfer meat to serving pan, skim fat and add cream. Heat to boiling and serve w/ pork
