Ingredients
1 lb ground beef
1 med yellow onion (chopped)
4-5 stalks celery (chopped)
6 cloves of garlic (chopped)
1 28 oz can of chopped tomatoes
4 6 oz cans tomato sauce
1 12 oz can of mushroom (bits and pieces) or 1 lb sliced fresh mushrooms
3-4 tbsp italian seasoning
2-3 tbsp extra virgin olive oil
 
1 pkg elbow macaroni
Parmasen cheese
salt and fresh ground pepper to taste

Instructions
Chop onions, celery and garlic and brown in lasrge skillet in about 2-3 tablespoons of extra virgin olive oil until translucent. Add ground beef and cook until no longer pink.
In large pot and on med-high heat, add your chopped tomatoes and liquid and then add the 4 cans of tomato sauce rinsing the can out with about 1/2 can of water in each can. (About 2 full cans of water to be used). Add the can of mushrooms and the liqued in the can for flavor. No add your ground beef and vegetables. Add italian seasoning and salt and pepper to taste. Bring to a boil and then turn down to a low simmer and cook about 3-4 hours allowing water to cook off and sauce to become as thick as a spaghetti sauce.
Cook elbow macaroni per package instructions and then mix with sauce and serve with grated Parmasen cheese over the top.
Serving Suggestions
Serve with garlic bread.
