Heat water and butter to 120 degrees F (48C). In large mixer bowl combine 3 cups flour, yeast, sugar, salt and warm water. (I add to warm water first until disolved) Mix at #12 for 3 minutes. Gradually add remaining flour to form stiff dough. Knead 4 minutes. Place dough in greased bowl, turning once to grease top. Cover and let rise in a warm place 30 min. Punch down, divide into 2 equal parts and place on greased baking sheet. Slash top of loaves diagonally at 2 inch intervals, brush with oil cover. Refrierate for 2-24 hours. When ready to bake, remobe from refrigeraotr, and let stand 10 min. Brush bread with slightly beaten egg white and water. Bake in preheated 400F (200C) degrees oven 35-40 min. cool on wire rack.
