     Pumpkin Roll

Ingredients
3/4 cup flour
1 tsp baking powder
2 tsp cinnamon
1 tsp pumpkin pie spice
1/2 tsp ground nutmeg
1/2 tsp salt
3 eggs (slightly beaten)
1 cup sugar
2/3 cup canned pumpkin
 
1 cup chopped nuts (optional)
15x10x1 jelly roll pan
FILLING
1 cup powered sugar
1 softened cream cheese (8 oz)
6 tbsp butter
1 tsp vanilla

Instructions
Heat oven to 375. Line pan with wax paper. Grease & flour wax paper. Beat all dry ingredients (not sugar) in one bowl. In another bowl, beat eggs & sugar until thick & fluffy. Beat in pumpkin. Then stir in dry ingredients. Pour over pan & spread with spatula. Bake 15 minutes or until center springs up. Take clean, damp cloth sprinkle with powdered sugar. Peel off wax paper & trim 1/4 inch off all sides. Roll up cake & place seam down. Refrigerate for at least one hour.
FILLING- Beat together 1 cup powdered sugar, 1 softened cream cheese, butter, vanilla until smooth.
Then fill the roll. Take foil & sprinkle with powdered sugar. Re-roll & refrigerate.
