     Zucchini Loaf Cake

3 eggs
2 cups sugar
1 cup vegetable or canola oil
2 cups grated, unpealed zucchini *
2 1/2 cups flour
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
3 teaspoons cinnamon
1 cup chopped walnuts or pecans
2 teaspoons vanilla

Preheat oven to 350 degrees. Beat eggs lightly. Beat in sugar, gradually then oil. Mix well.
Sift flour with baking soda, baking powder, salt and cinnamon. Add to egg mixture, althernately with zucchini. Stir in vanilla and nuts.
Mix well, then turn into two greased and lightly floured 9" x 5" x 2 3/4" loaf pans.
* ou can grate zucchini in blender with 1/2 cup of the oil. ** DO NOT OPEN OVEN WHILE BAKING. BREAD WILL FALL! ** Do not double recipe.
