     Carrot Cake

2 cups sugar
1-1/2 cups oil
4 eggs
2 cups flour
2 teaspoons baking soda
2 teaspoons cinnamon
3 cups grated carrots
1 cup chopped nuts (optional)
1 cup raisins (optional)
1 cup crushed pineapple (optional) add more flour
greased and floured 10" x 15" jelly roll pan
3 cups powdered sugar
8 ounces cream cheese
3/4 stick butter
1 teaspoon vanilla

Cream together sugar and oil, add eggs. Sift flour, baking soda and cinnamon. Add to creamed mixture. Fold in carrots, nuts, raisins and pineapple.
Bake at 350 degrees for 40 minutes.
Icing: Cream together powdered sugar, cream cheese, butter and vanilla. Turn cake out onto serving tray (or keep in cake pan). Spread icing over cooled cake.
