     German Potato Salad

5 lbs new red potatoes, peel on
1/2 C corn or vegetable oil
1/2 C vinegar
1/3 C sugar
1 1/2 tsp salt
3 Tbl finely chopped or dried parsley
1/2 C finely chopped onion
cooked bacon or bacon bits to taste

Boil the potatoes in a large pot for 15-20 minutes or until fork tender. Drain and place in a large bowl. Cover and chill. -this can be done the day before serving
Slice the potatoes and place back in the bowl
Combine the remaining ingredients in a small bowl.
Pour the dressing over the potatoes and mix well.
