4 lbs hot sausage
|

10 ea chicken gizzards, necks, livers and hearts
|

8 Tbl butter
|

2 large minced yellow onions
|
|
1 bunch minced green onions
|
|
1 large minced bell pepper
|

4 ribs minced celery
|
|
2 lbs cooked rice
|
|
1 C chopped ham
|

Instructions |
|
|
Boil gizzards, necks, livers & hearts in 2 qts water until done. Save broth. Fry hot sausage and render the grease.
|

Simmer onion, celery and pepper in 3 Tbl of sausage grease for 20 mins. Add green onion and simmer for another 10 mins.
|

|
Add chopped meat, ham and sausage to greens and mix in butter and parsley. Add some of the broth to moisten. Add salt to taste.
|
|
|
Let simmer for 15 mins more, then fold in rice. Put in double boiler to keep warm.
