     Beignets

Ingredients
1 C milk, scalded
1 Tbl Oleo (margarine)
1 pkg yeast
3 1/2 C flour
1 Tbl sugar
1 Tbl brown sugar
1 tsp nutmeg
1 tsp salt
1 egg
 
Oil for frying
1 bag or box of confectioner's sugar
1 paper bag ( for coating beignets)

Instructions
Heat milk to scalding, stirring constantly. Place Oleo in mixing bowl. Pour milk into bowl and stir until lukewarm. Add yeast. Sift dry ingredients together. Add 1/2 dry ingredients, mix well. Add egg. Stir in remaining dry ingredients. Cover, set aside until doubled in bulk.
Knead gently on flour boardand roll out to 1/4 in thick. With sharp knife, cut dough into 2" squares. Cover and let stand for 1/2 hour covered with waxed paper.
Fry until light brown. removed from oil and place immediately in brown paper bag full of confectioner's sugar. Shake bag until beignets coated.
Serving Suggestions
serve with Goop while decorating the Christmas Tree
