     Irish Super Soda Bread

Ingredients
4 C all pourpose flour + 1 Tbl for dusting
1/2 C sugar
2 tsp baking powder
1 tsp baking soda
3/4 tsp salt
3 C dark seedless raisins
1 Tbl caraway seeds
2 eggs, lightly beaten
1 1/4 C buttermilk
 
1 C sour cream

Instructions
Heat oven to 350. Grease a 9-inch round cast iron skillet or baking pan. Combine first 7 ingredients in large bowl. Blend last 3 ingredients in a small bowl. Stir into flour mixture just until flour is moistened.
Knead dough in bowl, about 10 strokes (dough will be very sticky). Shape into ball; place in skillet.
Cut a 4-inch "X" 3/4 inch deep across top of dough. Sprinkle with remaining Tbl of flour.
Bake in 350 oven for 65 to 75 minutes or until toothpick inserted comes out clean. Cool in skillet 10 minutes. Turn bread out onto wire rack to cool completely.
