     Stuffed Pepper Casserole

6-7 large bell peppers
2 1/2 lbs ground meat
1 lg pkg peeled shrimp ( approx 3-4 C)
Approx 4-5 C cooked rice
1 large onion, chopped
1/2 C shallots, chopped fine
1/2 C parsley, chopped fine
1/2 pkg onion soup mix
salt & pepper to taste

Par boil peppers. Save water from peppers. Slice peppers in half and lay in Pam sprayed casserole dish. Fry ground meat and drain fat. Mix together ground meat,remaining seasonings, cooked rice and shrimp. Add enough water from peppers to moisten. Cook for approx 20 minutes.
Spoon mixture onto peppers in casserole dish. Cover with aluminum foil and bake at 350 for approx 40 mins. Remove foil and bake for 20 mins.more.
