     Crab Spinach Spread

Ingredients
7 1/2 oz canned or fresh crabmeat
10 oz pkg frozen, chopped spinach
1 Tbl olive oil
1/2 C chopped scallions
1 clove garlic, crushed
pepper to taste
2 Tbl dry vermouth
1/3 C parmesan cheese
1/4 tsp dried oregano
 
1/2 C sour cream

Instructions
Cook spinach, drain thoroughly. In a heavy skillet heat oil; add scallions, garlic, crabmeat and spinach.
Cook gently a few minutes; stir in 1/4 tsp salt, vermouth, cheese, pepper and oregano.
Cook for a few minutes, then add sour cream.
Serve warm or chilled.
Serving Suggestions
serve with crackers or sliced, crusty rolls.
