     Spicy Black Bean and Corn Salsa

Ingredients
16 oz cooked black beans
16 oz fresh or frozen corn kernels
1/2 C fresh cilantro, chopped
1/4 C green onion
1/4 C chopped red onion
1/3 C lime juice
1 Tbl cumin
3 Tbl vegetable oil
salt & pepper to taste
 
1/2 C chopped tomato (optional)

Instructions
In a large bowl, combine all ingredients except tomatoes. Cover and chill at least 2 hours up to overnight. Just before serving, stir in tomatoes.
