     Mary's Pear & Gorgonzola Salad

2 ripe pears, sliced thinly
1/3 cup spiced walnuts (see below)
1/2 tsp. chopped fresh rosemary leaves
3 cups lettuce/greens
9oz aged gorgonzola cheese, broken up
cranberry vinaigrette (see below)
Spiced Walnuts: 1/2 lb. walnuts, 1 tsp. kosh. salt, 1/4 tsp sugar
1/8 tsp. chili powder, 1/4 tsp. olive oil, pinch of cay. pepper,
pinch of nutmeg and cinnamon.
Cranberry Vinaigrette: 3 tbl. olive oil, 1 tbl. red wine vinegar,
1 tsp. shallots (finely chopped), 1 tbl. cran. juice, 1/8 tsp. salt,
1/4 cup cranberries (chopped), 1/2 tsp. fresh black pepper

Prep salad and pears (cut pears right before serving)
Walnuts: 1. preheat oven to 300 2. combine spices with sugar 3. spread nuts on a cookie sheet and put them in the oven for 3-4 mins. 4. put toasted nuts in bowl, add oil and toss. Sprinkle spices and toss again 5. Put nuts back on the tray and into oven for add. 3-4 mins.
Vinaigrette: Combine all ingredients and stir together with fork or whisk
Add crumbled cheese, walnuts, and dressing to salad. Serve.
