1a) rinse lentils in a colander, let sit
1b) prep all veggies
1c) starting with the onions, then garlic, then carrots, saute the
veggies on medium for ~3 minutes with the oil.
1d) add spices and salt
2a) Add 1-2 cups of water to the veggies
2b) Add the soaked lentils
2c) Add more water so the level is a little above the lentils.
2d) cover and let simmer for 25 minutes, adding more water if
necessary.
If the lentils are somewhat soft, add the salsa and stir (if not, let
them cook a little longer)
