Boil noodles and oil about 8 minutes. Drain and rinse under cool water.
Combine broth and salt in large pan. Bring to a boil then stir in celery and onion. Reduce heat, cover and simmer 15 minutes.
In seperate bowl, mix cornstarch and water until completely dissolved. Gradually add to soup, stirring constantly. Add noodles and chicken and heat through.
