In medium bowl
Combine egg, shrimp, parsley and mayo, with spoon, stir together. Add bread crumbs on tbsp at a time, mix until mixture binds and you are able to form a ball.
Heat oil until hot. Shape approx 2 tbsp mixture into 1.5" balls and flatten into round cakes (if they do not hold together add more breadcrumbs). Drop each cake into hot oil, fry approx 2 mins. on each (until golden ball). Drain on paper towels.
