Cut each slab into two bone serving pieces. Rub the seasonings into both sides of the ribs. Place the ribs in a deep baking dish, cover and refrigerate overnight.
Preheat the oven to 450 degrees F. Pour the vinegar and hot pepper sauce over the ribs and bake covered for 1 1/2 hours. Remove from oven pour off pan juices and finish ribs in oven or on a outside grill.
To finish the ribs, coat ribs thoroughly with barbecue sauce (save some sauce to serve on the side) continue to cook in the oven for another 15-20 minutes or place on hot outdoor grill for 10 minutes each side.
